Texas Ranch Soup

This is one of our favorite soup recipes and one that can be made gluten-free. Just make sure you choose ingredients that are gluten-free, like the beans and even the corn. Be sure to check the taco seasoning. The recipe calls for ranch-style beans. I don’t know exactly what they are so we used 1 can each of Bush’s pinto and great northern beans. To make them “ranch-style,” I added a generous squirt of mustard, at least double that of ketchup, a bit of brown sugar, onion powder, garlic salt, and chili powder because I didn’t have any GF taco seasoning on hand. I also used a quart of home-canned tomatoes so I can’t vouch for the diced tomatoes.

Texas Ranch Soup

1 lb. ground beef, browned
2 15-oz cans ranch style beans (Bush’s pinto/great northern)
2 15-oz cans corn
2  14 1/2-oz cans diced tomatoes
1 package taco seasoning mix
Garnish with sour cream, crushed tortilla chips, & shredded cheddar cheese.

Combine all ingredients except garnish in a large stockpot; bring to a boil. Reduce heat and simmer 15 minutes. Spoon into serving bowls; garnish with tortilla chips and cheese. Serves 6

Removing Widgets With No Remove Button

Have you ever uploaded a new Blogger template only to find you are left with widgets you cannot delete because they have no remove button? I think what happens is they become corrupted when changing templates. Trying to delete them by editing the HTML has never worked for me. I was at the pre-tearing hair out stage while working with my template recently and Googled hoping to find a solution. I finally did and wanted to share it because it worked like a charm.

Kid History Videos

I’m updating my blog a little, to reflect changes in my life over the last year. Since I am no longer home schooling, I had hoped to blog more, but I spent the year writing instead. Finally finishing that book was a milestone for me. Writing is a large part of my life and because I am starting to write a new book now, I had thought to have a writing blog, too, but I have to be realistic. So, from time to time I might post about writing, for myself and anyone else who might love the writing life and find it useful. I’m also loving Pinterest, so I would love to share things I find now and then. There is so much helpful information there for homemaking, housekeeping, etc. Members of our household have joined the ranks of Celiac Disease sufferers, so I’ll likely be writing about that, too. My daughter’s journey to finding out why she has been suffering debilitating stomach problems for three years has been long and emotionally draining for us. As was the road we have traveled with my youngest son who has Asperger’s. He is navigating his way into adulthood which often tugs hard at my heart. Life is rarely dull and often overwhelming for me which is why I have never been a terribly consistent blogger.

It’s so important to find and recognize the joy in life. Have you seen these Kid History videos where the dads act out the story their kids are telling but in the kids' voices!? So funny!!
